Fructose: Fructose is also called fruit sugar. It is a ketonic simple sugar.

  • It is derived from sugarcane, maize, and sugar beets.
  • It can be anaerobically fermented by the yeast and bacteria to produce Ethanol and Carbon dioxide.

Uses of fructose:

  • Commercially, it is used in foods and beverages.
  • It is cheap and the sweetest carbohydrate.
  • In food, fructose can exists either as a free polysaccharide or as a disaccharide (sucrose bound to glucose).
  • It is used as a sweeter agent in the manufacturing of many food items.
