The accessory pigment of plants is chlorophyll and carotenoids. Anthocyanin belongs to the group of flavonoid pigments. They are able to change colour with a change in pH. In the presence of hypertonic solution, the vacuole will lose water and concentrate the pigment in a smaller space making it look darker.
