Can we use the plant hormones (which are responsible for preventing virus infection in the meristem), for protection from viruses in our body?

No.

Plant meristem does not get virus infected because the cells are constantly undergoing mitotic division at a rate faster than viral growth. This is possible as plant cells in meristem are continually growing for example in roots.

So, this cannot be applied to human body as human body cannot undergo constant division like that in plants.
