Sucrose is dextrorotatory (+66.50) but after hydrolysis it gives an equimolar mixture of D−(+)−glucose and D−(−)−fructose , which is laevorotatory . this change of specific rotation from dextrorotation to laevorotation is called inversion of sugar and the mixture obatined is called invert sugar.
