Question

If the earth rotates from the west to the east, why do the sun and stars move from the east towards the west?

Solution

The Earth rotates from the west to the east. So, due to the relative motion, the Sun and the stars appear to move from the east to the west.

For example, if we are sitting in a running train, the platform and the poles appear to move in the opposite direction.
