The manufacturing of cheese begins with curdling of milk by the addition of Lactobacillus to the milk. The curd produced is then separated from whey. This step is followed by processing of the curd to remove the moisture. Then, salting is done to prevent the growth of undesirable micro-organisms. Finally, during ripening, the curd is incubated at suitable temperature and humidity.
