Unsaturated fatty acids have one (or) more double bonds in their structure. For e.g. Oleic acid, linoleic and linolenic acids etc. Whereas saturated fatty acids have no double bonds. For e.g. palmitic acid, stearic acid etc. Saturated fatty acids have a higher melting point and unsaturated fatty acids have lower melting points and tend to be liquids in room temperature.
