In addition of sodium bisulphite, the nucleophile is bisulphite ion which, being a large ion, reacts only if C = O group is not sterically hindered. Thus CH3COC2H5 and C6H5COCH3, having larger group like - CH2CH3 and  C6H5, do not react with NaHS03
