Why does sugar syrup , use for coating sweets with sugar, becomes hard when cooled?

1. Due to the process of evaporation and absorption occurring simultaneously, the extra water is removed from the sugar solution applied over the sweet.

2. Now as sugar particles crystallise when the sweet cools, we see a fine coating of sugar on sweets.
