Solution

Yeast:

  1. Yeast is a single-celled eukaryotic organism.
  2. It belongs to the kingdom of fungi.
  3. It is also known as Saccharomyces cerevisiae.
  4. It requires food, warmth, and moisture to survive.

Use of yeast in the production of wine:

  1. It is metabolised anaerobically. This process is known as fermentation.
  2. Fermentation involves the anaerobic breakdown of glucose molecules.
  3. This results in the conversion of glucose into ethanol and carbon dioxide.
  4. The fermentation of grapes produces wine.
  5. It is one of the most important ingredients in the fermentation process of wine.
  6. Yeast converts the sugars in grape juice to ethanol.
  7. This reduces the pH level of grape juice making it more acidic.
  8. It is also providing good quality, such as texture, taste, nutritive value, odour, etc.
  9. The different flavours of wine are determined by the grapes used, and the yeast used.
  10. The wine quality also depends upon the length of fermentation time.
  11. The fermentation process is carried out due to the addition of yeast.
  12. This fermentation process distinguishes plain grape juice from wine.
  13. Bread, kimchi, yoghurt, and other foods are all also made through the fermentation process.
