1.)When things are heated beyond certain temperature leads to a physical change. The substances will change its states of matter .i.e physical state. It may melt into liquid, vaporise into a gas or even catch fire. 2.)When milk gets slowly heated up, the fat in the milk being lighter gets to the top, which collects & the inside being more hotter than the top surface of the fat film, the film forms a veneer over the boiling milk.In the meantime, the boiling milk produces bubbles, which can't escape to atmosphere, as they are trapped under the fat film, so it comes out of the container.
