Sodium bicarbonate (sodium hydrogen carbonate) is known as baking soda.
It is a salt of composition of a sodium cation (Na⁺) along with a bicarbonate anion (HCO₃^-)
It is used in the baking industry. When heated it release carbon dioxide gas which results in the softness of the bread.
