Let the situation be as shown in the below figure.

Collision is perfectly elastic hence, (e=1) along the line of impact
e=Velocity of seperationVelocity of approach
e=vsinθucosθ ...(i)

As we know, perpendicular to the LOI, momentum will be conserved for individual particle.
Thus, usinθ=vcosθ v=utanθ ...(ii)
So, from eq. (i) and (ii) we have
e=utanθsinθucosθ
e=tan2θ
Hence, the coefficient of restitution is e=tan2θ
