Anthocyanin is a water soluble pigment. Plasma membrane is made up of lipids and proteins. It is generally permeable for lipophilic or lipid soluble compounds and does not allows free passage of water soluble or hydrophilic compounds. Hence, anthocyanin pigment cannot pass through the cell membrane. However, if the membrane is damaged by chemicals or other treatment like boiling etc. anthocyanin will readily flow out of cells.
