Filtration is used for separating insoluble solids from a liquid. Sand and pebbles are insoluble in water, so, they can be removed by filtration. The filterate contains saltwater.

Since, salt is soluble in water, it can be removed by evaporation. Water evaporates on heating leaving behind the salt.
