A mixture of oil and water is called an emulsion. An emulsion is defined as a mixture of two liquids which do not combine. When the liquids are stirred an emulsion occurs but after sometime the liquids separate into individual layers. We have seen that oil floats on water, when we stir it, an emulsion is formed.
