Vegetables such as spinach and beetroots are known to contain moderate amounts of soluble and insoluble oxalates. Soluble oxalates, when consumed, have the ability to bind to calcium in the spinach and the beetroot and any calcium in foods consumed with the spinach and beetroot, reducing the absorption of soluble oxalate. So they are not included in the diet to avoid further complications in a person suffering from kidney stones.
