Rice is the basic staple food source for more than half of the world’s population. While it is an excellent source of calories, its micronutrient content is very low. Professor Potrykus and his team genetically engineered rice to produced 𝛃-carotene, which is a precursor of vitamin A because of 𝛃-carotene rice colour is golden yellow, so it is known as golden rice. So by just including golden rice in the regular meals, night blindness and vitamin A deficiency can be prevented.

Golden rice was created by transforming rice with two beta-carotene biosynthesis genes:
  1. psy (phytoene synthase) from daffodil (Narcissus pseudonarcissus)
  2. crtI (phytoene desaturase) from the soil bacterium Erwinia uredovora
