Horizontal surface : $N=mg$

Concave surface : $\frac{m{v}^2}{r}=N-mg$ $⟹N=\frac{m{v}^2}{r}+mg$

Convex surface : $\frac{m{v}^2}{r}=mg-N$ $⟹N=mg-\frac{m{v}^2}{r}$

$\therefore$ Normal reaction is maximum in case of concave surface.
