Acetic acid is more acidic than carbonic acid, therefore will dissociate more and will have more number of acetate ions than bicarbonate ions. also, the second dissociation constant of carbonic acid is very small, therefore majorly bicarbonate will exist.

The bicarbonate ions can form extensive intermolecular hydrogen bonds among themselves and with water and thus will be difficult to vapourize as compared to acetate ions which lack hydrogen bonding to other acetate ions.
