Addition of Nitric acid to water is a physical change where as addition of calcium oxide to water is considered as chemical change

No chemical reaction happens when nitric acid mixed with water,nitric acid is soluble in water so the nitric acid become more diluted in mixing with water no new product is formed so it is called physical reaction


When water is added to calcium oxide (quicklime), it will be converted to calcium hydroxide (slaked lime) with the liberation of enormous amount of heat.
CaO + H2O = Ca(OH)2 + heat

when CaO and water react each other and a new product calcium hydroxide is formed that is why it is called chemical reaction
