An enzyme that converts casein to paracasein
Renin
Renin is also known as chymosin and is a proteolytic enzyme produced by the chief cells in the stomach. Its purpose is to curdle milk in the stomach. This prevents the milk from flowing through the stomach so that the proteins can be digested. It converts casein to paracasein. This is very important for children.
Pepsin and trypsin also break down proteins during digestion. The acid in the stomach causes proteins in the food to unfold in a process called denaturation. Denaturation exposes the protein's molecular bonds so that pepsin can access them and break the proteins into smaller fragments, called peptides or polypeptides. Amylase helps in the breakdown of carbohydrates and starches into sugar.
