A restriction enzyme (or restriction endonuclease) is an enzyme that cuts DNA at or near specific recognition nucleotide sequences known as restriction sites.
E stands for Escherichia the genus name and co stand for coli which is the species name. R is the name of the strain and I because this is the first enzyme isolated.
