Expansion and contraction occur due to temperature fluctuations during the day and night. The outer layer of the rock expands and contracts more than the inside of the rock. The expansion and contraction processes put stress and pressure on the rock till the outer surface develops cracks, and peels away layer by layer resulting in exfoliation.
