Monosaccharides consists of simple sugars but polysaccharides consists of number of sugar molecules bonded together. Plant cells consists of cellulose which is a polysaccharide, hence time is taken for the digestion of this complex sugar. Carnivores, on the other hand, eat flesh which doesn't contain cellulose, so lesser time is taken for digestion. Hence, herbivores have a larger small intestine.
