A zwitter ion is a molecule that has both positive and negative regions of charge. It is amphoteric in nature. α-Amino acid contain both basic and acidic group. In them amine is basic while carboxylic group is an acid group. Amine being basic accept the H+ from COOH and leaves the COOH as COO. Thus form zwitter ion.
Proteins on partial hydrolysis give peptides of varying molecular masses which upon complete hydrolysis give 𝛼-amino acids.​
