Blood seems to be single phase from a distance. So at this scale we might call it homogeneous.

But when you go take a closer look, you notice that there are many other dispersed particles. These are similar to the oil droplets we saw earlier. They are just smaller in size.
So, we can draw boundaries around these and identify different physical properties. From this argument we can say that blood is not homogeneous.
But which one is right? Depends on the context.
