Roquefort cheese, a type of blue cheese made from goat’s milk in France is made using Penicillium roqueforti. First the fresh milk is pasteurized to kill the unwanted microbes and inoculated with lactic acid bacteria like Lactobacillus along with rennet enzyme. The rennet hydrolyzes the casein protein and coagulates it to form curds; the resultant solid mass of denatured protein/curd is then separated from the liquid. Then, the fungi Penicillium roqueforti is sprinkled on the cheese and allowed to age and ripen for 60-90 days resulting in the formation of blue cheese.
