Vitamins are the compounds that are required in small quantities for the maintenance of the normal health of the body.
Vitamins can be classified into two types namely fat-soluble vitamins and water-soluble vitamins.
Fat-soluble vitamins are stored in the fat cells and are insoluble in water. Vitamin A, D, E, and K are fat-soluble vitamins.
Water-soluble vitamins are not stored in our body and when they are in excess, get excreted through the urine. Vitamin B and C are water-soluble vitamins.
Part 2: Boiling is a preferred to frying:
Boiling is a preferred process to frying as far as preservation of nutritive values is concerned because in boiling there is a loss of only water-soluble vitamins whereas, in frying, there is a loss of both water-soluble and fat-soluble vitamins.
