Fermentation:
Fermentation is the metabolic process where glucose is broken down in the absence of oxygen to release a small amount of energy with the production of alcohol or lactic acid.
Example: Wine, beer and yoghurt are commercially produced using yeast.
During intense exercise, the muscles in our body face a shortage of oxygen.
This causes the muscles to break down glucose anaerobically to release energy and lactic acid in the presence of the enzyme lactate dehydrogenase.
Accumulation of lactic acid results in muscle cramps. This is relieved with rest.
