The food substances kept in concentrated solutions of sugar and salt do not get spoilt because salt or sugar draws out the water content from the food and microorganisms (osmosis). Lack of water destroys the microorganisms completely. Preservation of food in vinegar is based on the principle that microorganisms cannot survive in an acidic environment and preservation of food in oil is based on the fact that oil cuts off the moisture from food.
