Covering in wax papers prevent mangoes from
Ethylene is a natural plant hormone that aids in the ripening of fruits. It enhances the respiration rate during the ripening of fruits. This elevation of respiratory rate is known as respiratory climactic. Ethylene also stimulates the activity of the cellulase enzyme that causes the breakdown of cellulose. Hence, the tissues of the fruits become soft.
In a wax-coated mangoes, the thin layer of wax adheres tightly to the surface. This reduces the forming of ethylene that fastens the ripening of mangoes, thereby reducing the respiration rate and softening of the tissues. Thus, covering mangoes in wax paper prevents faster ripening, prevents enhancing the respiratory rate as well as softening the tissues.
