Define the term rancidity.
Rancidity
The change in taste and smell of food due to the hydrolysis or oxidation of fats and oils in it is called rancidity. It is a slow physico-chemical change and is classified into two types based on the chemical reaction occurring in it. In hydrolytic rancidity, the ester bond in fats and oils is hydrolyzed in the presence of moisture in air and Lipose enzyme. In oxidative rancidity, Oxygen in air oxidizes the unsaturated fats and oils. Saturated fatty acids are more resistant to rancidity than unsaturated fatty acids.
