Particles of matter experience an interparticle attractive force. This interparticle force of attraction is related to the interparticle distance. Shorter the interparticle distance, larger is the interparticle force of attraction and vice-versa. Honey is made up fructose and glucose which have very short interparticle distance and hence there is a larger attractive force between them. Therefore, it is difficult to break the attraction and move our fingers.
