Salivary amylase: It is known to break down the starch or complex carbohydrates in the food into simple sugars such as maltose and dextrin.

Pepsin: It is known to break down proteins into simpler forms, i.e. amino acids.

1. Salivary amylase is secreted by the salivary glands in the buccal cavity.1. Pepsin is secreted by the gastric chief cells in the stomach.
2. It works upon carbohydrates and breaks them down.2. It works upon proteins and breaks them down.
3. It does not require any agent to get activated.3. Pepsin is released in the inactive form of pepsinogen which gets activated into pepsin by HCl.
