Digestion starts from the moment we put food in our mouth. Here, large chunks of food are broken down into smaller particles by the action of our teeth. This is called mechanical digestion. Along with this, food in the mouth also gets mixed with saliva. Saliva contains an enzyme called 'salivary amylase' which starts the process of chemical digestion. It acts on starch and breaks it down to maltose. Chemical digestion i.e. the action of enzymes continue as food moves down the digestive tract.
