Microwaving heats the food at very high temperatures in a very short amount of time. In the process it emits a non-ionizing radiation, changing either the electromagnetic nature of atoms, or ionizing them. The molecular structure of proteins, antioxidants’ gets destroyed and this change is permanent. That is why food heated in a microwave is termed as that which has undergone a chemical change.
