On heating, some substances changes from liquid state to solid. This is due to the increase in intermolecular attraction ( in some cases, it is due to strong hydrogen bond)
in the case of dosa batter, on heating, molecules of dosa batter comes closer hence it forms a strong intermolecular force So it become solid
