Water is used as a coolant in industries and car radiators, it is due to high specific heat of water. The specific heat of a substance is the heat required to raise the temperature of unit mass of substance through $1^o$. It means, water absorbs a lot of heat to get a small rise in its temperature, compared to other substances for the same rise in temperature i.e. water heats up late, that's why used as a coolant .
