When cells are placed in hypertonic solution (has more solutes), exosmosis occurs and water moves out of the cell. This happens because the water potential of cell is higher than the water potential of the sorrounding hypertonic solution. Water always moves from a region of higher water potential to lower potential. Due to exosmosis, the protoplasm shrinks and the cell is said to be plasmolysed.
