Why there are pores on the surface of a bread?

Dear Student,

Bread is prepared from dough mixed with yeast which undergoes anaerobic respiration to produce CO2 and alcohol. The yeast cell fills the balloons of gluten with CO2 and alcohol which may fuse together to form large pores on the surface of the bread.
