Evaporation is the process of conversion of liquid to a gaseous state.
The earthen pot consists of small pores in it i.e. it is porous.
Due to a large number of extremely small pores in an earthen pot through which the water kept inside the pot keeps on evaporating and takes the latent heat required for vaporization from the earthen pot and remaining water.
The earthen pot and water hence lose heat and this makes the water inside the earthen pot cool.
Hence, an earthen pitcher keeps water cool during the hot summer season.
