The addition of excess sugar and salt to jams and pickles leads to an increased concentration of the solution in them i.e., the solution is hypertonic.
Whenever the microorganism enters the pickle or jam it leads to exosmosis as the concentration of cell sap of microorganism is lower compared to surrounding.
