The digestion of carbohydrates begin in the mouth where the salivary amylase acts on carbohydrates. Further as it passes down the alimentary canal, various enzymes break down the complex carbohydrates into simple sugars. In small intestine, pancreatic amylase further breaks down the polysaccharides converting them into disaccharide and monosaccharides.
