(i) Principle and Equation: In this process, a dilute aqueous solution of ethyl alcohol is oxidized in presence of enzyme mycoderma aceti.

$C H_{3} C H_{2} O H [O_{2}] - ----------- \to M y c o d e r m a a c e t i C H_{3} C O O H + H_{2} O$
