Solution

With different level of water in the bottle, the pitch of sound will also different. When we blow air on the mouth of bottle, we make a jet of air that can be felt by finger close to mouth of bottle.

When we blow, this jet of air deflected into or over the top of bottle. When we add water in empty bottle there will be less empty space in bottle so it takes less time for pressure to build up in the bottle so vibration will be more quickly that produces a higher pitch.

As we reduce the level of water; it will also reduce the pitch as pressure inside the bottle will be less due to more empty space.
