Plasmolysis is the shrinking of protoplasm due to loss of water as a result of exosmosis (movement of water out of the cell). A hypertonic solution is one which has an osmotic concentration higher than that of another solution (in this case the concentrated sugar solution). So exosmosis takes place in the cell. Here the grapes cell sap is dilute when compared to the concentrated sugar solution. Hence exosmosis will take place and the grapes will shrink.
Hot water will break down the cell wall and cold water will harden the cells.
