Albuminous seeds are the seeds that have food stored in their special nourishing tissue known as endosperm that remains persistent till maturity. Cotyledons do not act as food storage organs. e.g. Castor seed.

Exalbuminous seeds are the seeds that have the stored food and the cotyledons in a special structure called as kernel. It will not remain persistent until the embryo is mature enough. e.g. groundnut seeds
