Pickles, jams, jellies, and squashes are preserved in hypertonic salt or sugar solution that increases the osmotic pressure and it induces the plasmolysis of bacterial and fungal cells.
Plasmolysis is the process of shrinkage of the protoplasm of cells due to loss of water.
The hypertonic solution creates an unfavorable environment for the bacteria and fungi therefore, it results in growth inhibition.
