Dear student, This is due the process of transpiration. The leaves lose water in the form of vapours through stomata by the process of transpiration. When a plastic bag is placed over the plant, these vapours strike with the cool walls of plastic and condense. This results in the formation of water droplets on the inner surface of plastic.
